Mung Bean, Cabbage & Apple Salad

Serves: 5

Ingredients

  • 2 cups mung beans, boiled & cooled
  • 3 cups green cabbage, chopped finely
  • 3 medium apples, diced
  • 5 Tbsps. raisins

For the dressing:

  • 6 Tbsps. lemon juice
  • 1/2 tsp. salt
  • 1 tsp. black pepper
  • 1 Tbsp. olive oil

Method

  • In a small bowl, whisk together all the dressing ingredients, and refrigerate.
  • In a large salad bowl, mix together mung beans, cabbage, apple and raisins.
  • Note: apple should only be added before serving, as it browns when it is cut and kept aside.
  • Add salad dressing, toss up and serve immediately.
