Arugula Beetroot Goat Cheese Orange Salad

Ingredients

  • 2 cups arugula
  • 2 medium beets, boiled, peeled, cubed
  • 1 large orange, peeled and segments halved (about 3/4 cup)
  • 1/4 cup goat cheese, crumbled

For the dressing

Whisk together:

  • 1 Tbsp. extra virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • 2 tsps. red wine vinegar
  • ¼ tsp. salt
  • ¼ tsp. fresh ground black pepper
  • ¼ tsp. vegetable seasoning 

Method

  • Place arugula, beets and oranges in a large bowl.
  • Pour dressing over salad; and toss to coat.
  • Sprinkle with goat cheese and serve.
