Ingredients
- 3 cups quick cooking oats (270g)
- 1 3/4 cup whole wheat flour (210g)
- 1 tsp. baking powder
- 1 tsp. baking soda
- ¼ tsp. salt
- ¼ cup olive oil
- ½ cup brown sugar
- 1 egg, lightly beaten
- ½ tsp. vanilla extract
- ½ cup semi-sweet chocolate chips
Method
- Preheat oven to 190°C (375°F). Prepare cookie sheets by greasing or lining with parchment paper; or use a silicon mat.
- In a large bowl, mix quick cooking oats and 200ml water and set aside.
- In another bowl, add sifted whole wheat flour, baking powder, baking soda and salt.
- Blend oil, sugar, egg, vanilla extract and add it to the oat mixture and mix well.
- Gradually add the wheat flour mixture to the oats.
- Fold in chocolate chips. Note: you can replace chocolate chips with raisins or other dried fruit, nuts and seeds.
- Drop a heaped tablespoonful of the mixture, approximately 2 inches apart on the prepared baking tray; or silicon mat.
- Bake for 15 min or until golden brown.
- Allow to cool on a rack for a few minutes before removing cookies.
