Ingredients
- 2 cups arugula
- 2 medium beets, boiled, peeled, cubed
- 1 large orange, peeled and segments halved (about 3/4 cup)
- 1/4 cup goat cheese, crumbled
For the dressing
Whisk together:
- 1 Tbsp. extra virgin olive oil
- 1 Tbsp. balsamic vinegar
- 2 tsps. red wine vinegar
- ¼ tsp. salt
- ¼ tsp. fresh ground black pepper
- ¼ tsp. vegetable seasoning
Method
- Place arugula, beets and oranges in a large bowl.
- Pour dressing over salad; and toss to coat.
- Sprinkle with goat cheese and serve.
